Get It Together

Um... Hi.

I'm still in my pj's.  My hair is unwashed.  My coffee is getting cold.  The dried up Christmas tree is staring me in the face.

Must be Tuesday.

Oh, there are a lot of things on my To Do list... I just haven't gotten to them yet.  You understand and love me still.  I know you do.

While I muster up the

strength

 desire to get a move on, I present you with a friendly little salad.  Sunshiny oranges and creamy-dreamy avocado brighten up a January day.

Let's not forget the feta cheese and sunflower seeds...  Crunch and tang bring that brightness home.

Good luck with your own To Do lists, kids.  Get in this salad and get goin'!

Orange, Avocado, and Spinach Salad

Fresh spinach (2 handfuls per person)

1/2 inch orange slices, peeled (1/2 an orange per person)

1/2 in avocado slices (1/2 an avocado per person)

small handful of roasted sunflower seeds (salted is my preference)

crumbled feta

extra virgin olive oil

fresh cracked pepper

On a plate, layer fresh spinach with the orange and avocado slices.  Sprinkle with the sunflower seeds, and then the feta.  Add fresh cracked pepper (no salt), a slight drizzle of olive oil.  Serve.
